# What You Need:
→ Greens
01 - 8 large fresh spinach leaves, washed and dried
→ Filling
02 - 3.5 oz cream cheese, softened
03 - 1 tbsp fresh chives, finely chopped
04 - 1 tbsp fresh parsley, finely chopped
05 - 1 tsp lemon juice
06 - Salt and pepper, to taste
→ Vegetables
07 - 1 small carrot, julienned
08 - 1/2 small red bell pepper, julienned
09 - 8 small cherry tomatoes, for garnish
# Directions:
01 - In a small bowl, combine cream cheese, chives, parsley, lemon juice, salt, and pepper until smooth and well blended.
02 - Lay each spinach leaf flat on a clean, dry surface for assembly.
03 - Spread approximately 1 tablespoon of the herbed cheese mixture evenly onto the center of each spinach leaf.
04 - Top the cheese layer with a few julienned strips of carrot and red bell pepper.
05 - Carefully roll each spinach leaf, folding in the sides to enclose the filling fully, then secure with a toothpick.
06 - Place a cherry tomato atop each toothpick for a festive appearance and serve immediately or chill briefly.
