I first served this to my family on a hectic weeknight and it quickly became a favorite thanks to its rich flavors and minimal cleanup

Ingredients

  • Proteins: 2 boneless skinless chicken breasts (about 400 g) cut into 1 inch pieces 150 g Spanish chorizo sausage sliced into thin rounds
  • Vegetables: 1 medium yellow onion diced 1 red bell pepper diced 2 cloves garlic minced 1 cup (150 g) frozen peas
  • Grains: 1 cup (200 g) long grain white rice rinsed
  • Liquids: 2 1 4 cups (540 ml) chicken broth 1 tablespoon olive oil
  • Spices & Seasonings: 1 teaspoon smoked paprika 1 2 teaspoon dried oregano 1 4 teaspoon cayenne pepper (optional for heat) Salt and black pepper to taste
  • Garnish: Fresh parsley chopped Lemon wedges (optional)

Instructions

Step 1:
Heat the olive oil in a large deep skillet over medium high heat
Step 2:
Add the chicken pieces and season with salt and pepper Sauté for 3 4 minutes until lightly browned but not cooked through
Step 3:
Stir in the chorizo onion and red bell pepper Cook for another 3 minutes until vegetables soften and chorizo begins to release its oils
Step 4:
Add the garlic smoked paprika oregano and cayenne Stir for 1 minute until fragrant
Step 5:
Pour in the rice and toast for 1 2 minutes stirring to coat the grains in oil and spices
Step 6:
Add the chicken broth scraping any browned bits from the bottom of the pan Bring to a boil
Step 7:
Reduce heat to low cover and simmer for 15 minutes
Step 8:
Uncover stir in the peas and cook for 3 5 more minutes until rice is tender and liquid absorbed
Step 9:
Taste and adjust seasoning if needed Remove from heat
Step 10:
Garnish with chopped parsley and serve with lemon wedges if desired
