# What You Need:
→ Chicken Skewers
01 - 1.3 pounds boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
02 - 8 wooden or metal skewers
→ Spicy Peanut Marinade
03 - 4 tablespoons creamy peanut butter
04 - 2 tablespoons soy sauce
05 - 2 tablespoons lime juice (about 1 lime)
06 - 1 tablespoon brown sugar
07 - 1 tablespoon sriracha or chili garlic sauce, adjust to taste
08 - 2 cloves garlic, minced
09 - 1 tablespoon fresh ginger, grated
10 - 2 tablespoons vegetable oil
11 - 1 teaspoon ground coriander
12 - 1 teaspoon ground cumin
13 - 2 tablespoons water

14 - 2 tablespoons chopped roasted peanuts
15 - 2 tablespoons chopped fresh cilantro
16 - Lime wedges
# Directions:
01 - If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
02 - Whisk together peanut butter, soy sauce, lime juice, brown sugar, sriracha, garlic, ginger, vegetable oil, coriander, cumin, and water until smooth.
03 - Set aside 3 tablespoons of the marinade for basting during grilling.
04 - Add chicken cubes to the remaining marinade, toss to coat thoroughly, cover, and refrigerate for at least 1 hour.
05 - Thread the marinated chicken pieces evenly onto the skewers.
06 - Heat grill or grill pan to medium-high and lightly oil the grates to prevent sticking.
07 - Grill skewers for 12 to 15 minutes, turning every few minutes until chicken is cooked through and slightly charred.
08 - Brush reserved marinade on the chicken during the last minute of grilling.
09 - Remove skewers from grill, sprinkle with chopped peanuts and cilantro, and serve with lime wedges.
