# Directions:

01 - Wash and dry all vegetables thoroughly.
02 - Slice the cucumber into thin rounds to represent vertebrae and tail bones.
03 - Peel and cut carrots into thin sticks for ribs and limbs.
04 - Cut yellow and red bell peppers into strips for the jaw, spine, and claws.
05 - Break broccoli and cauliflower into small florets to mimic skull, pelvis, and joints.
06 - Layer baby spinach leaves evenly over a large serving platter to create a background.
07 - Arrange vegetables on top of spinach to form a T-Rex fossil, using olives for eyes and claws and cherry tomatoes as accent bones or fossil eggs.
08 - In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, dill, garlic powder, onion powder, salt, and pepper until smooth.
